지난 열 번의 저널 동안 저희는 참 많은 이야기를 했습니다. 그런데 그 모든 이야기를 읽고도, 여러분 마음 한구석엔 이런 망설임이 남아 있을 걸 압니다.
"이야기는 좋은데… 그래서 처음 시키기가 좀 그래."

'맛을 담다'라는 제목을 오래 생각했습니다.
담는다는 건 그릇에 정성을 담는 일이자, 그 맛이 여러분께 온전히 닿을 때까지 책임진다는 뜻입니다. 담아서 보내고, 닿지 못했다면 물러드리고. 그 전부가 '담다'에 들어 있습니다.
그리고 하나 더. 저희에게 '담는다'는 건, 한 그릇에 그날의 혼신을 쏟아붓는 일입니다. 삼십오 도의 부엌에서 사십 년의 손과 삼십 년의 설계가, 오늘 이 한 그릇에 가진 것을 남김없이 담습니다. 대충 담은 그릇은 문밖으로 내보내지 않습니다. 그러니 여러분이 받으시는 한 그릇은, 저희가 그날 낼 수 있는 최선의 정성 그 자체입니다.

Putting the Flavor In — A Promise to You, on Your First Time
Hello. This is Jay, the one who built Giljuok.
Today I won't hand the microphone to Eric — I'll write to you myself. Because this isn't a story to be told through an interview. It's a promise I'm making to you directly.
Over the past ten journals we've told a great many stories. And yet I know that even after all of them, a certain hesitation lingers in a corner of your heart.
"The story's lovely, but… I'm still not sure about ordering for the first time."
That's honest. I'd feel the same. So today, instead of a long persuasion, let me offer just a few short promises.
We Won't Sell Cheap
First, let me make this clear. We do not sell our naengmyeon cheap.
To sell cheap, there's only one way: cut the fish, or use cheaper ingredients. I don't think that's fair to this food. The fish and meat the master and I see and choose ourselves at the market each dawn, the generous portion, the forty-year seasoning — the moment you strip something away to lower the price, it's no longer the naengmyeon we want to serve.
So I want the price of a bowl to equal what's in that bowl. That's the honesty we mean to keep.
Instead, We'll Help You Experience It
But I know this: Hamheung hoe-naengmyeon is an unfamiliar food the first time. Spicy, tart, chewy — the kind of taste that leaves you thinking "what is this?" and then, a few days later, suddenly comes back to you. The trouble is, the road to that first experience is a long one.
So I'll do what I can. Instead of lowering the quality, I'll run whatever promotions the current system allows, so that you can experience this taste for the first time. First-order benefits on the delivery apps, review events, a side dish on the house — that sort of thing. The details change with the season, but the direction is one: to let you take that first bite without pressure, without ever making the naengmyeon cheap.
It isn't discounting the price. It's lowering the threshold of experience. Those two are entirely different things.

Something has changed on my phone lately, in fact. The numbers of people who tasted our food and sent feedback have started saving themselves, one by one. "The noodle was just right." "Wish the dadaegi were a bit hotter." "Number one in Mapo-gu, this place." Short little lines — and now they're nearing thirty of them. I don't delete these numbers. Because I think this is the very small beginning of a conversation between Giljuok and its customers. The conversation we'd have face to face if we had a storefront — we're building it up, one call at a time, like this.
Honestly, these days the kitchen hovers around thirty-five degrees. Drawing broth over the flame and resting the seasoning, the sweat runs down your back. And yet, in that heat, each time one more number saves itself to my phone, strangely the sweat doesn't feel wasted. If anything, that one call tells me why the master and I circled the market at dawn and stood in this scorching kitchen. So this is how a sense of reward accumulates — one person at a time. I feel it every day now.
Why go this far? I told this story once before, in an earlier journal. My parents came down from the North, and over this naengmyeon they said, "it tastes of home." To me, this one bowl is that kind of food. And so I find it hard to bear this naengmyeon being left as someone's disappointment. The refund isn't because it pays — it's a promise I make because I can't stand to see this food treated that way.
Behind One Customer Stand a Hundred
I believe that behind one customer stand a hundred more. If the one who orders for the first time today is satisfied, that one person tells a hundred. So to me, each of you is never just one bowl.
Which is why, rather than selling cheap to pile up customers who pass through once, I'd rather earn one lasting guest with a fairly priced bowl. Lowering the threshold for that one person, taking responsibility for that one person — I believe that's the only way I can keep this kitchen for a long time.
I thought long about the title, "Putting the Flavor In."
To put something in is to put care into a bowl — and to take responsibility until that flavor reaches you whole. To put it in and send it; and if it didn't reach you, to take it back. All of that lives inside that one word.
And one more thing. For us, "to put in" means to pour the whole of that day's soul into a single bowl. In a kitchen at thirty-five degrees, forty years of hands and thirty years of design hold nothing back from this one bowl today. A bowl filled halfheartedly never goes out the door. So the bowl you receive is, in itself, the very best care we could give that day.
